Most people enjoy a nice cuppa, so I have put together the cuppa with a difference, just a few recipes to get you started in exploring this famous brew and make it more exiting just by using your imagination. So here I have brought together two of Chinas favourite sons. Tea and V.I.P Jiu. 8 Baijiu
Many people are surprised to learn that all teas, yellow, white, green, Oolong, black and pu-er are all made from the leaves of the same species of plant. Also there are hundreds of different brands for each category. While there are variety’s of the Camellia Sinensis plant, the weather conditions and the soil contribute in the final tasting of the tea, but the significant differences of tea type is developed in the drying of the leaves.
Teas can be scented with fresh or dried flowers such as jasmine or rose or flavoured with citrus fruits and herbs such as mint. Or simply a drop or two of flavoured essences. Herbal teas are not really a tea but an infusion of dried herbs. While all true teas contain caffeine, herbal teas do not. The history of herbs and spices are far more ancient than that of tea.
These recipes are a guide only, use your own discretion, for example if I use sugar and you don’t take sugar then simply alter to your taste. Also I am using the two mug method of making tea from leaf, place the desired amount of loose tea into one mug, pour over freshly boiled water, let it steep for a minute, strain into the second mug which contains the other ingredients and there you have your brew.
Teas can be drank hot or chilled, if chilling leave out V.I.P. Jiu 8 until ready to pour. I have named these brews after lakes in China, so lets get started.
The rarest of tea types is yellow tea, it is a speciality of Anhui, Sichuan, Zhejiang and Hunan provinces of China. There are just a few yellow teas in China and production is limited. The teas were often used as tribute teas, given to the emperor. The process for gathering and making yellow teas are time consuming and difficult. That is why they are so expensive.
Ailik – V.I.P Jiu 8 Baijiu Infused Tea
- 2 mugs
- 1 teaspoon of yellow tea leaf
- 4 teaspoons of V.I.P. Jiu 8
- Sugar to taste
- Draw fresh cold water, put on to boil
- In one mug add the yellow tea leaf
- In the other mug add V.I.P. Jiu 8 and sugar
- When the water has boiled let it rest for a minute
- Then pour it over the tea leaves, let the tea steep for a minute

Albi – V.I.P Jiu 8 Baijiu Infused Tea
- 2 mugs
- 1 teaspoon of yellow tea leaf
- 4 teaspoons of V.I.P. Jiu 8
- 2 drops of lemongrass extract
- Sugar to taste
- Draw fresh cold water, put on to boil

Ayding – V.I.P Jiu 8 Baijiu Infused Tea
- 2 mugs

- 1 small slice of fresh apple

Chaiwopu – V.I.P Jiu 8 Baijiu Infused Tea
- 2 mugs
- 1 teaspoon of yellow tea leaf
- 4 teaspoons of V.I.P. Jiu 8
- 2 drops of strawberry extract
- 1 fresh strawberry, sliced
- Sugar to taste

- When the water has boiled let it rest for a minute
- Then pour it over the tea leaves, let the tea steep for a minute

Chao – V.I.P Jiu 8 Baijiu Infused Tea
- 1 teaspoon of yellow tea leaf
- 4 teaspoons of V.I.P. Jiu 8
- 2 drops of almond extract
- 1 slice of fresh peach
- Sugar to taste

Daye – V.I.P Jiu 8 Baijiu Infused Tea
- 1 teaspoon of yellow tea leaf
- 4 teaspoons of V.I.P. Jiu 8
- 2 drops of orange blossom extract
- 1 small slice of fresh orange
- Sugar to taste

White tea is the least processed as it is merely dried, it is a light delicate tea, retaining high levels of antioxidants. The best are sweet and grassy. They release the least amount of caffeine of all teas. Almost all white teas come from Fujian province in China and only the baby leaves are used to produce this tea.
Zhangdu – V.I.P Jiu 8 Baijiu Infused Tea

Yezhi – V.I.P Jiu 8 Baijiu Infused Tea

- 2 drops of butterscotch extract
- 1 small slice of fresh honeydew melon
- Sugar to taste

Dian – V.I.P Jiu 8 Baijiu Infused Tea

- 2 cocktail cherries

Green teas are fired or steamed at high temperature shortly after being picked. The flavours vary wildly. Green tea leaves picked in the morning are ready to be brewed by evening. The bypass of oxidation allows green teas to retain most of their natural colour, tannins, vitamin c and minerals. Popular varietals of green tea are gunpowder, matcha and sencha green teas.
Tai – V.I.P Jiu 8 Baijiu Infused Tea

- chocolate sprinkle

Nansi – V.I.P Jiu 8 Baijiu Infused Tea

- pinch of grated nutmeg
- Sugar to taste

Yanxi – V.I.P Jiu 8 Baijiu Infused Tea

- 2 drops of banana extract
- 3 tablespoons of double cream
- Sugar to taste
- Draw fresh cold water, put on to boil
- In one mug add the green tea leaf

- When the water has boiled let it rest for a minute
- Then pour it over the tea leaves, let the tea steep for a minute
- Strain into the second mug, stir, pour the cream over the back of the cold spoon and enjoy
Dagze – V.I.P Jiu 8 Baijiu Infused Tea

- 2 drops of orange extract
- Honey to taste

Oolong lies carefully in-between green and black tea, being somewhat oxidized. The light teas are green and fruity while the darker teas are roasted and nutty. These teas are to be enjoyed with most foods, for they have the complexity of black tea, with the freshness of green tea. Oolong teas are produced only in China and Taiwan.

Black tea is fully oxidized to bring out the deep flavours. Black tea is best with sweet dishes, these teas brew a liquor ranging from reddish brown to dark brown. They are the most popular teas in the western world. The growing regions in India that produce the largest amounts include Assam and Darjeeling.
Tanxun – V.I.P Jiu 8 Baijiu Infused Tea

- 1 teaspoon of black tea leaf

- Fresh milk to taste

Pu-erh is a fermented tea, traditionally made in large cakes, they are crumbled into the teapot. The flavour is earthy and pleasantly savoury. These teas go well with fatty foods. Pu-erh teas are age fermented. There are two types of Pu-erh tea, one of raw and one of ripe. These teas are revered throughout Asia for their medicinal benefits.
Huangqi – V.I.P Jiu 8 Baijiu Infused Tea

- 2 drops of peach extract
- 1 half of sliced peach
- Sugar to taste

Dongting – V.I.P Jiu 8 Baijiu Infused Tea

- 1 teaspoon of Pu-erh tea leaf

- 2 drops of cherry extract
- 1 half of sliced apple
- Sugar to taste

Longgan – V.I.P Jiu 8 Baijiu Infused Tea

- Strain into the second mug, stir and enjoy
You can use teabags if you wish, then you will only need one mug. Also instead of using tap water and essence, you can use clear flavoured still water. Just let your imagination go, there are hundreds of variations for you to try.
