Here is a list of hot toddy recipes to enjoy, some recipes are for one serving while others are to share with company. I have named these hot toddies after Chinese mythological creatures.
Penghou – Baijiu Hot Toddy
- 2 tablespoons of honey
- Pinch of ground ginger
- 5 fluid ounce of V.I.P. Jiu 8 Baijiu
- 35 fluid ounces of larger
- 5 fluid ounces of sweet sherry
- Strip of lemon peel
- 1 thinly sliced eating apple
- Grated nutmeg
Gently melt the honey with ginger in a saucepan, add the beer, sherry and lemon peel. Heat to below simmering point, add V.I.P. J iu 8 Baijiu. Float the apple slice on top, sprinkle with nutmeg. Serve in warm glasses or mugs, makes approx 10 servings.
Tiangou – Baijiu Hot Toddy
- 8 cloves
- 1 orange
- 1 lemon
- ½ a stick of cinnamon
- Pinch of grated nutmeg
- 50g of lump sugar
- 5 fluid ounce of V.I.P. Jiu 8 Baijiu
- 20 fluid ounce of port
- 20 fluid ounces of boiling water
Spike the orange with cloves, place in a preheated oven for 20 minutes. Zest the lemon and squeeze out the juice. Put the baked orange into a saucepan, add port, boiling water, cinnamon and nutmeg. Gently heat for five minutes, add the sugar, lemon juice and rind. Stir in V.I.P. Jiu 8 Baijiu. Serve immediately in glasses or mugs. (Approx 10 servings)
Bai Zi – Baijiu Hot Toddy
- Sugar to taste
- 2 tablespoons of double cream
- ½ a fluid ounce of V.I.P. Jiu 8 Baijiu
- 5 fluid ounces of hot strong black coffee
Put sugar and V.I.P. Jiu 8 Baijiu into a warm glass, pour in the coffee and stir until sugar has dissolved. Pour the cream onto the surface over the back of a cold spoon. (1 serving)
Denglong – Baijiu Hot Toddy
- 1 orange
- 1 lemon
- 6 cloves
- 2 bay leaves
- ½ a stick of cinnamon
- 3 oz of sugar
- 4 fluid ounces of V.I.P. Jiu 8 Baijiu
- 26½ fluid of ounces red wine
Put the orange in a pre heated oven and cook for 30 minutes. Put the orange, sliced lemon, bay leaf, cinnamon, sugar and wine into a saucepan. Gradually heat to below simmering for 15 minutes. Strain into a warm heat proof bowl, stir in V.I.P. Jiu 8 Baijiu. Serve in warmed glasses. (Serves 6 – 8)
Jin Chan – Baijiu Hot Toddy
- 5 fluid ounces of V.I.P. Jiu 8 Baijiu
- 25 fluid ounces of sweet Madeira
- 10 fluid ounces of fresh orange juice
- 5 fluid ounces of hot water
- Grated nutmeg
Gently heat the Madeira, V.I.P. Jiu 8 Baijiu and orange juice in the pan for five minutes, add hot water to taste and serve in warm glasses or mugs, sprinkle nutmeg over liquid. (Serves 8 – 10)
Longma – Baijiu Hot Toddy
- 3 ounces of sugar
- 8 cloves
- A pinch of ground cinnamon
- 2 ounces of raisins
- 2 ounces of blanched almonds
- 26½ fluid ounces of V.I.P. Jiu 8 Baijiu
- 35 fluid ounces of medium sweet sherry
Put all the ingredients into a saucepan, heat to just below simmering for 5 minutes, serve in warmed glasses or mugs. (Serves approx 10)
Quingniao – Baijiu Hot Toddy
- 6 tablespoons of clear honey
- 11 fluid ounces of water
- ½ a stick of cinnamon
- 1 vanilla pod
- 2 long strips of lemon rind
- 2 long strips of orange rind
- 26½ fluid ounces of V.I.P. Jiu 8 Baijiu
Put all the ingredients except V.I.P. Jiu 8 Baijiu into a sauce pan, simmer for 5 minutes. Remove from heat and cover and leave to infuse for 1 hour. Strain and return to a clean pan. Add V.I.P. Jiu 8 Baijiu heat gently for 5 minutes. Serve in small glasses or cups. (Serves 8)
Nian – Baijiu Hot Toddy
- 1 lemon
- 4 tablespoons of clear honey
- ½ a cinnamon stick
- 1 orange, sliced
- 25 fluid ounces of medium dry white wine
- 1 fluid ounce of V.I.P. Jiu 8 Baijiu
Thinly pare rind off lemon and squeeze the juice. Mix the juice with honey into a saucepan. Add the rind, cinnamon and wine and heat gently for 5 minutes. Remove the cinnamon, add V.I.P. Jiu 8 Baijiu and orange slices. Serve in warmed glasses or mugs. (Serves 5 – 6)
Xiao – Baijiu Hot Toddy
- 1½ teaspoons of soft brown sugar
- ½ a ounce of unsalted butter
- A pinch nutmeg
- 2 fluid ounces of V.I.P. Jiu 8 Baijiu
- 7 fluid ounces of boiling water
Add the ingredients except nutmeg to warmed glass or mug stir until the butter has melted. Sprinkle nutmeg over. (Serves 1)
Kui – Baijiu Hot Toddy
- 1 lemon
- 6 cloves
- 4 ounces of sugar
- ½ a cinnamon stick
- 26 fluid ounces of red wine
- 5 fluid ounces of V.I.P. Jiu 8 Baijiu
Spike the lemon with cloves. Gently heat the wine, lemon, sugar and cinnamon in a saucepan for 5 minutes. Add V.I.P. Jiu 8 Baijiu, warm for 1 minute, strain and serve in warmed glasses or mugs. (Serves 6)
Xiezhi – Baijiu Hot Toddy
- 2 fluid ounces of V.I.P. Jiu 8 Baijiu
- 4 fluid ounces of ginger wine
- 1 tablespoon of double cream
- ½ a cinnamon stick
- ½ a teaspoon of orange zest
Gently heat ginger wine and V.I.P. Jiu 8 Baijiu in a saucepan to simmering point. Pour into warmed cup or glass, pour cream over the back of a cold spoon onto the surface, add cinnamon and sprinkle the orange zest. (Serves 1)
